Dainty Cornmeal Muffins

1 egg
2 tablespoons sugar
1 1/2 cups sweet milk
1/2 teaspoon salt
1 cup cornmeal
2 cups flour
2 teaspoons baking powder
2 tablespoon melted lard (I'd use butter now)

(Again no instructions, I put in muffin papers and bake at 350 degrees for about 15 minutes.)



Cabbage Dressing
Beat 2 eggs
6 Tablespoons strong vinegar
3 Teaspoons sugar
1/2 teaspoon mustard
1 tablespoon butter
Let it boil up, and when cold put it on the cabbage.

(Again no instructions--no amount of cabbage it is to cover etc)


Bread Pudding
1 pint Bread crumbs
1 quart milk
yolks of 4 eggs
1 tablespoon butter
1/2 cup sugar
nutmeg or cinnamon (no amount given)
(I am assuming all this would be mixed and put into a baking pan)

The whites of the eggs--beaten add a bit of sugar and put it on top and set in oven until browned.

(Isn't it amazing what knowledge of cooking was assumed in these recipes?)
